- ½ Cup Peanut Butter Natural, No sugar added
- ¼ Cup Liquid Aminos or Low Sodium Soy Sauce
- 2 Tablespoons Rice Vinegar
- 1 Tablespoon Brown Sugar Replacement Swerve
- 2 Tablespoons Sambal Oelek Asian Garlic and Chili Sauce
- 1 Teaspoon Sesame Oil
- 2 Teaspoons Fresh Ginger Minced
- 2 Teaspoons Garlic Minced
- 1 Medium Red Bell Pepper cut into short, thin strips
- 1 Carrot cut into short, thin strips
- 1 Jalapeño cut into short, thin strips
- 2 Scallions (or Green Onions) thinly sliced
- 2 Cups Broccoli Florets
- ¼ Cup Roasted Unsalted Peanuts Chopped
- 1 Lime
- 8 Ounces Explore Cuisine Black Bean & Sesame Fettuccini Noodles High Protein Noodles
Combine peanut butter with liquid aminos, brown sugar substitute, rice vinegar, sambal oelek and sesame oil to make the sauce.
Cook noodles as directed on package.
Sautée garlic, ginger, bell pepper, carrots and jalapeño.
Add broccoli, cooked noodles and top with scallions, chopped peanuts and a squeeze of lime juice.
Serve hot, at room temperature or cold.
